Around these parts, it has been a colder than normal summer. Now, while that's great for keeping the A/C bill low, it just doesn't seem like summer without a heat spell. Just in time for the "dog days of August", we're expecting our first consecutive 90 degree days, so our thoughts turned to what items have been HOT sellers at All Seafood and SeafoodByNet recently.

Did you know that August is National Sandwich Month? Back by popular demand to help you celebrate the sandwich in gourmet fashion is our 1/2 pound PRIME rated Burger Patty Pack. With the rising temps, seafood grill-masters are feeling the heat to come up with something more than just the typical grilled fish dish. No wonder they are snapping up our FRESH Swordfish Loin. The USDA says Swordfish is an excellent source of selenium, niacin, and vitamin B12...plus you get those hearth healthy omega-3 fatty acids in every bite!

And with that crazy tomato scare over, we have a "smokin'" recipe to show off your culinary talents!

FRESH Swordfish Loin (Item No. DD25)

One pound of fresh swordfish cut from the center of the tenderloin. A meaty, mild-flavored fish that is great on the grill. $18.95/lb.

Grilled Swordfish With Smoked Tomato Salsa

Preparation time: 1 hour (including marinating) Cooking time: 10 minutes

Ingredients (yields four servings):

- 1 1/2 pounds FRESH SeafoodByNet Swordfish Loin

- Juice of 3 limes

- 1/2 teaspoon ground cumin

- 1/2 cup extra-virgin olive oil

- Salt, Cayenne pepper

- 2 medium-ripe tomatoes, cut in thick slices

- 1 large onion, peeled and cut in thick slices

- 2 tablespoons finely chopped scallions

- 2 tablespoons minced fresh coriander.

1. Divide the swordfish into four pieces of equal size. Place it in a dish that will hold it in a single layer.

2. Combine the juice of one lime with the cumin, one-fourth cup of olive oil, and salt and Cayenne pepper to taste. Pour over the fish and turn it to coat all sides. Marinate about 45 minutes.

3. Preheat grill or broiler. Brush the tomato and onion slices with the remaining olive oil and grill or broil them until they just begin to sear. Remove from grill, allow to cool slightly.

4. Finely chop the tomatoes and onions and combine with the scallions, coriander and remaining lime juice in a bowl. Season to taste with salt and pepper. Set aside.

5. Grill or broil the fish to the desired degree of doneness. It should take about eight minutes for medium.

6. Check seasonings of salsa. Serve the fish with a topping of the salsa on each portion.
